From a simple shell to a ‘pastures to plate’ restaurant
Chiller Box loves working on new restaurant projects especially when they have such a strong and interesting food concept. Origin is an exciting new field to fork venture based in Smithfield. We were asked to work on this project via a recommendation from an accountant who had heard about our work. He took Michael to the site when it was simply a shell, and we instantly knew it was something we wanted to work on.
With it being all about field to fork, they primarily have a meat menu. The family have a farm in Scotland and wanted to create a menu using all their own meat. They know everything about the produce including how it’s slaughtered and butchered; we love their strong focus on provenance.
One of the elements that really excited us about this project was how they wanted to use a BBQ to cook a lot of their food. We researched and then installed a BBQ grill which the diners can see whilst eating, adding an element of theatre to the kitchen.
For this project, we designed and installed the main kitchen as well as a preparation kitchen and butchery area. As with any construction project, there were some challenges to overcome as there were a few delays on the client side which were out of their and our control. However, we were able to adapt our project plans to ensure we delivered our work efficiently, as and when the client was ready for us.
The client was really happy with everything we did at Chiller Box. They liked our response times and how closely we worked with their project manager. It was important that we kept the client and project manager updated at every stage of the project.
Our team are strong believers in the importance of ‘old school’ communication where we speak either face to face or on the phone as much as possible. One of the highlights of this job was working with such a good project manager. He was really knowledgeable and kept everything moving seamlessly. It’s great to work on a project like this and overcome challenges together as one big team.
This is a high-end restaurant and we’ve been hearing from the client how well the business is going. As well as a delicious menu, they have a really good selection of wines, and we are sure the concept will continue to be successful. We are proud of the result on this project as it was great to see the transformation from a shell to a beautiful and busy restaurant in a popular London location.
