Wok cookers, sometimes referred to as pit-style stoves, are typically heated by natural gas that has burners recessed below the stove's surface, with curved grates on the lip of the stove to provide stability to the curved wok. Woks do not heat up efficiently enough on a standard hob as they require very high intensity heat to be fully directed at the bottom of the wok, with no heat escaping around the edges.

Wok cookers allow food to be stir-fried at a very high heat and are typically used by professional chefs in Chinese restaurants, since they have the heating power to give food an alluring wok hei, which is the flavour, tastes, and essence imparted by a hot wok on food during stir frying.

To test the temperature of oil, stick a chopstick in the wok; once the oil sizzles around it, it is hot enough to cook in.
